Obtained from fresh milk collected daily, craftsmanship and slow maturation (about 16/18 hours), give this cheese a unique sweetness and softness which, together with the flavor of the Senise Crusco Pepper PGI, caresses the palate with a sweetness without even!
- Craftsmanship:starting from the spinning up to the handmade molding, which does not allow to always obtain the same portioning.
- Use:As per tradition, being a fresh cheese, it can be eaten with bread, but in the kitchen it has a varied use. We start to stuff the fillings of lasagna, panzerotti, calzoni and omelettes because in addition to ennobling the taste it is also an excellent thickener.
- Tradition:In winter, in Basilicata, tradition has it that it is cut into slices thick enough to be skewered by a fork which will then approach the flame of the fireplace in order to blend according to one's taste. Wonderful to be fried in a pan and sublime when breaded and fried!
