Purgatory beans are characterized by a very fine skin and need to be soaked for only 2 hours and 1 hour to cook. These beans are widely used in the preparation of soups, in soups (the classic pasta and beans) with the ritual addition of locally produced extra virgin olive oil raw. However, it is also used in stews, to accompany meat stews or as a side dish in fish dishes.
