Quick and tasty recipe: While the orecchiette are cooking, it is necessary to fry the turnip greens with anchovies, extra virgin olive oil and garlic. Once the pasta has been drained, saute everything and serve, alternatively, with crispy bread.
Matigge Pastificio Artisan Orecchiette: are the typical Apulian orecchiette, handcrafted with slow drying durum wheat semolina.
Turnip greens: they are the real Cime di Rapa in the natural state, freshly picked and without preservatives, typical of the Apulian tradition.
Anchovy fillets from the Cantabrian Sea: traditionally fished in spring when the meat is perfect for both flavor and size. The processing takes place on the fishing site and is exclusively manual, to guarantee an excellent product at all times.
