It takes 20 delicate steps to get Acquerello rice, starting from the helix, still considered the best method to whiten rice by rubbing the grains. The raw rice is aged for at least a year in silos at a controlled temperature of less than 15 ° to allow the starch to stabilize and ensure that it is less dispersed during cooking and that each single grain increases the absorption capacity of the seasonings. The gem, which is the vital part of the rice, is separated from the grain during processing and reintegrated thanks to a patented process in Acquerello. All this to combine the taste of white rice with the nutritional elements of brown rice.
