The black truffle, or Norcia truffle it is harvested from December 1st to March 15th. The "peridium" appears as a black warty surface, with small reddish areas if the product is immature. The gleba is black-brown with slight whitish veins very dense. The scent is aromatic, not too pungent, and the flavor is delicate. Widely diffused in the Central Apennines, in Piedmont and in Veneto. It can be grown in suitable soils specially reforested with particular tree species. Perfect for a first or second course of freshly grated meat for an original touch of taste and unique flavor.

STORAGE AND USE: The fresh truffle is a product that must be consumed within a few days to savor its taste and aroma in their entirety. After this period of time it is still possible to eat the product, bearing in mind that it will begin to lose some of its qualities that make it so special. Small specks of mold are absolutely normal as the truffle is an underground mushroom and, like all mushrooms, has a vegetative body represented by a whitish mold. The truffle is literally born from the symbiosis of molds and roots from which they steal the nutrients. The truffle needs an external cleaning before being used, ideally under cold running water with a toothbrush, so as to free it from any residues of earth and small mold spots. To keep it at its best, we recommend storing it in the fridge for about 7 days, otherwise it can be safely frozen.

WHERE IS IT: The truffle is a fruit of the earth, an extremely valuable and sought-after underground treasure. Like mushrooms, they spontaneously arise in the soil at a depth ranging from 10 to 60 centimeters in free areas, such as woods or uncultivated land, along river banks or in controlled areas called truffle grounds.”.

COLLECTION: The truffle hunters are those who, with the help of trained dogs, work in the search for truffles. In order to be able to carry out the activity, it is necessary to be in possession of a special authorization issued by the Mountain Communities.
