The black truffle Uncinato, black truffle from Fragno or "winter scorzone", is harvested from October 1st to December 31st. It is very similar to Tuber aestivum but has less large warts; the gleba is much darker; the scent is stronger and more pleasant and the flavor more marked. Perfect for combinations of red meats and game, first courses with long pasta such as Stringozzi, as well as for tasty and tasty bruschetta and omelettes.

STORAGE AND USE: The fresh truffle is a product that must be consumed within a few days to savor its taste and aroma in their entirety. After this period of time it is still possible to eat the product, bearing in mind that it will begin to lose some of its qualities that make it so special. Small specks of mold are absolutely normal as the truffle is an underground mushroom and, like all mushrooms, has a vegetative body represented by a whitish mold. The truffle is literally born from the symbiosis of molds and roots from which they steal the nutrients. The truffle needs an external cleaning before being used, ideally under cold running water with a toothbrush, so as to free it from any residues of earth and small mold spots. To keep it at its best, we recommend storing it in the fridge for about 7 days, otherwise it can be safely frozen.

Like mushrooms, they spontaneously arise in the soil at a depth ranging from 10 to 60 centimeters in free areas, such as woods or uncultivated land, along river banks or in controlled areas called truffle grounds.”.
