The Semillon, Sauvignon and Muscadelle grapes, dried by the action of Botrytis Cinerea, or the Noble mold , are harvested manually in 4-5 crops with meticulous care. The bunch, affected by this mold, will be dehydrated and greyish with a thinned skin, but will give a rich and full must.

  • Method : The best botrytized grapes comepressed gently overnight. After a cold stop the must is doneferment in thermoregulated stainless steel tanks which thenwill age in small precious barrels for about 18 months to obtain a small miracle of nature, without equal. One of the most used vines is the Semillon, a white grape, widespread throughout the territory. Château Simon also uses Sauvignon blanc grapes, native to southwestern France, and Muscadelle, perhaps derived from the Dordogne area.
  • Place : The vineyards cultivated in full respect of the environment, with cutting-edge biological methods, are located in the municipality of Barsac : to the south / east of Bordeaux, where the climate is characterized by mild days and nocturnal mists, essential for favoring the development of Botrytis Cinerea, or the Noble Mold. Perfect emblem of the prestige and fame of the winery in question.
  • Features : Intense and brilliant golden yellow. This wine gives a intense aroma of soft exotic fruit and citrus. The attack is round and fruity with a wide evolution, endowed with an enveloping, harmonious and fresh body. The finish is rich in spicy notes, with the right balance between sweet and acid that gives a delicate touch of freshness made particularly pleasant by the light woody character.
  • Pairings : It goes well with foie gras, fatty cheeses or dry pastries. Excellent with a terrine of goose liver.

It is not far from the center of Barsac, in the Simon district, that Château Simon has stood for nearly two centuries. At the beginning, in 1814, it was a polyculture farm. Over time, Château Simon has forged a wine specialization with character. Today the vineyards of Château Simon extend over 33 hectares and are found in three main appellations: Sauternes, Graves and Bordeaux. The main grape varieties grown are Sémillon, Sauvignon, Merlot and Cabernet Sauvignon.
