Brut Rosé comes from a skilful blend of the three main grape varieties of the Champagne region: Chardonnay, Meunier and Pinot Noir, belonging to various vintages. it is the most famous and representative Champagne of the Maison of Mareuil-sur-Ay. A label of great finesse and expressive intensity, which is part of the circle of excellence of the Rosé type.

  • Process : The grapes are part of the vineyards of 28 municipalities of the Marne. Afterpressing soft and separate vinification, the vins clairs rest for a few months awaiting creation assembly definitive. At the moment of the cuvée, a small percentage of Pinot Noir vinified in red is added to the bases. The second fermentation takes place in the bottle according to the methodChampenoise, with a stop sur lattes of at least 48 months.
  • Features :Color bright coral pink, with perlage fine and persistent. The nose it expresses itself on intense aromas of small red fruits, pink flowers and citrus peel. In the mouth, the wine is taut, develops with great linearity and elegance, beautiful freshness and good balance. It closes with elegance on delicate raspberry.
  • Pairings : Brut Rosé goes wonderfully with sushi, not very elaborate second courses of fish, especially with salmon in various preparations, with small crustaceans or light appetizers. It is also perfect as an aperitif.

Maison Billecart-Salmon

The Maison's champagne is the result of the know-how of its men, who take care of a 100-hectare estate. The grapes come from 40 Champagne crus, planted on a total area of 300 hectares. Most of the grapes for winemaking are grown within a radius of 20 kilometers around the municipality of Épernay. The grand crus of Pinot Noir, Chardonnay and Pinot Meunier coexist in this territory that extends between the Montagna di Reims, the Côte des Blancs and the Marne Valley. It all began in 1818, when Nicolas François Billecart and Elisabeth Salmon got married and founded their champagne house. It is the story of a family, because Louis Salmon, Elisabeth's brother and an enology enthusiast, also participates in the production of wines. And this is how, after seven generations, the whole family still contributes to handing down the tradition, remaining faithful to an immutable commitment: Prioritizing quality, aiming for excellence. In this plot, the vines are managed and cared for with extreme care, in full respect of the environment. Maison Billecart-Salmon has chosen to return to traditional methods by reintroducing the draft horse and sheep. Thus the porosity and biodiversity of the soil improve, the roots develop in depth and the minerals extracted favor the growth of smaller and more concentrated grapes, which best express all the peculiarities of our terroir. In the Clos Saint-Hilaire, an exceptional champagne was born, named after the patron saint of Mareuil-sur-Aÿ. Produced exclusively from Pinot Noir vinified in cask, it develops a rare complexity and a surprising freshness. A limited quantity of bottles is produced for each vintage: between 3500 and 7500, all numbered. In the 1950s, the Maison introduced the cold racking technique and stainless steel vats for longer fermentation at low temperatures. The wine cellar mainly uses small thermoregulated vats (47 hectoliters), which allow to observe the traceability of vines and plots. This type of vinification cru by cru and vine by vine allows to preserve all the peculiarities of the terroir. By making wine at a low temperature, the fermentation process is slowed down and favors airy and delicate aromas in which all the purity of the fruit is manifested.
