Collefrisio cooked must is a tradition that unites all areas of Abruzzo. Its procedure has several stages: the grapes are pressed with normal crushers. The must-flower thus obtained is filtered to clean it from the skins and pips and cooked. Once the boiling phase is reached, the must is left to thicken on a low heat for about 8 hours, until the quantity reaches about a quarter of the starting quantity.

SIZE: 0.25 liters.

PROVENANCE: Abruzzo.

FEATURES: Caramel color, with good density, intense notes of dried figs, sweet spices, dried and candied fruit on the nose. On the palate great sweetness and roundness supported by a good acidity.
