The humid autumn favored a good water reserve, while the winter saw mild temperatures, sometimes above the seasonal average. After a cold start in February, March and April brought alternating sun and rain, favoring lush vegetation. The warm and stable summer, interspersed with occasional rain, allowed for optimal ripening of the grapes, harvested slightly earlier than usual.\u003c\/li\u003e  \u003cli\u003e  \u003cstrong\u003e\u003cem\u003eHARVEST\u003c\/em\u003e  \u003c\/strong\u003eThe harvest, carried out entirely by hand, began in the second week of September with the Cabernet Franc grapes and continued with the Cabernet Sauvignon, starting first in the vineyards located at lower altitudes, until finishing in the first ten days of October, in the hilly ones above 300 metres above sea level.\u003c\/li\u003e  \u003cli\u003e  \u003cem\u003e\u003cstrong\u003eVINIFICATION\u003c\/strong\u003e  \u003c\/em\u003eThe 2021 harvest was carried out entirely by hand, starting in the first week of September with Cabernet Franc and continuing with Cabernet Sauvignon until the end of the month. The grapes were carefully selected on sorting tables, with soft pressing and delicate destemming to preserve the integrity of the berries. The alcoholic fermentations, spontaneous and without the addition of external yeasts, were monitored at controlled temperatures. Frequent delestages and pumping over ensured excellent aromatic extraction and acidic freshness. It is located on the Etruscan coast between Livorno and Grosseto, in the Maremma made famous by the verses of Giosuè Carducci and extends for 13 kilometers from the sea to behind the hills. It contains three excellences: Sassicaia, the Razza Dormello Olgiata in thoroughbred horses and the Padule di Bolgheri Wildlife Refuge, the first in Italy. They are the cardinal points of the estate and also geographically mark its territory: the Padule towards the sea, the training center on the plain and the vineyards that reach up to almost 400 meters among the scrub on the hills.
