Raw milk Pecorino is the classic Umbrian pecorino , produced with great care:the cheeses are treated using the most modern technologies but, at the same time, respecting the old traditions with the use of natural ingredients and with the manual handling of the forms of cheese.
- The peculiarity of this pecorino is the production of raw or unpasteurized milk cheese , this allows the product to maintain the organoleptic qualities of the place of production and not be contaminated.
- The true craftsmanship of this pecorino lies in the difficulty in finding it , being a cheese with limited availability produced by a very small company in the Umbria region . It is impossible to find such specialties in the trade since normally the artisan producers limit themselves to reselling only to friends and relatives.
