Semi-hard cheese made from whole or pasteurized buffalo milk . the yellow ocher rind is netted and clean, while the paste is compact, dry and has small, regular holes. It immediately conquers with its olfactory complexity.

It is not difficult to find notes of butter, umami, yeast, aromatic herbs such as sage and floral notes of honey. Sweet in the mouth, with the right flavor, the aromatic notes turn towards lactic and vegetal. The consistency is pleasant thanks to its solubility and graininess.
