The red wine of Franciacorta is also a classic of Ca' del Bosco. Equipped with a very precise physiognomy, the result of a historical culture valorised and reinterpreted in a modern key.

  • Development : Vinified for the first time with the 1975 harvest, it is in the genetic heritage of the rural tradition of the area, where it has always been produced. Commonly called " burdonsì magher ", it is yet another testimony to the authentic historical vocation for the production of black grapes . Grown with the original name of Franciacorta Rosso DOC , it was subsequently called Terre di Franciacorta and then Curtefranca Rosso. With the 2016 vintage it takes the name Corte del Lupo. These two terms are well described by the new label which contains the essence of the terroir and legitimizes the viticultural quality of Ca' del Bosco : the vineyard, the Court, the embrace of the forest and the wolves, faithful guardians of the domain.
  • Winemaking : Ca' del Bosco has decided to rediscover and re-evaluate the traditional red blend of the area, returning to favor the Merlot, Cabernet Franc and Carménère varieties over Cabernet Sauvignon. A return to the past to enhance the character of the Merlot fruit, the elegance of Cabernet Franc and the roundness of Carménère. The presence of Cabernet Sauvignon ensures the essential backbone to confer balance and longevity. This wine is the result of a careful selection of grapes and skilful vinification conducted in full compliance with the Ca' del Bosco Method. The grapes from 8 different vineyards, harvested by hand in small boxes, are promptly coded and cooled in cold storage. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A particular washing and hydromassage system for the bunches, using three soaking tanks and a system for complete drying. Next, each bunch is transported over the maceration vat. With destemming, the grapes fall into the vat, from above, by gravity. This eliminates traditional pumping systems, which cause breakage of the skins and unwanted herbaceous notes. In the 2018 harvest, maceration in contact with the skins lasted 18 days for Merlot and Carménère, 19 days for Cabernet Franc and Cabernet Sauvignon. The alcoholic fermentation and maceration were conducted by carefully managing the temperature and punching down. The pumpovers were carried out daily, using a pair of elevator tanks into which the wine, drawn from the bottom of the vat, is transferred by gravity. The wine, brought to altitude by the flying tanks, is poured into the vat, at a high flow rate, to submerge the "hat". Nothing more natural and effective for delicately extracting color and tannins. Upon racking, the wines, still warm, are decanted into small oak barrels. Only after the malolactic fermentation, in the middle of winter, is the decanting and assembly of the different batches carried out. Thus was born the "Corte del Lupo Rosso", which continues its refinement in wood and steel for approximately 22 months. The wine is then bottled by gravity, in a natural way. Thanks to innovative "long cannula" taps, the wine rises from the bottom of the bottle without laminating, without shaking and does not undergo any oxidative shock. No addition of sulphites at this stage, to guarantee integrity and healthiness. Finally, each packaged bottle is uniquely marked to ensure traceability

Today we directly manage over 250 hectares of vineyards following the certified organic viticulture protocol. A journey that began in 1989, in an experimental phase, and was completed in recent years. The vineyards are located in 10 municipalities in Franciacorta and the average age of our vineyards is over 20 years.
