  • Characteristics : Brut Réserve is an airy, fine and harmonious non-vintage champagne. The blend consists of three vintages from the best terroirs of the Marne: Pinot Noir, Chardonnay and Meunier. With its pale golden yellow reflections, it stands out for its fine bubbles and abundant and persistent foam. A frank and precise attack on the palate, followed by an exceptional sensation of freshness. A rich bouquet, the result of aging in traditional cellars. On the nose it is a mature wine with a touch of floral freshness that releases hints of fresh fruit and ripe pear.
  • Pairings : Brut Réserve is perfect as an aperitif. It goes well with less elaborate fish main courses, molluscs and small crustaceans or with light appetizers, it is a wine to be drunk preferably as a classy aperitif, to best enjoy this French nectar.

Maison Billecart-Salmon

The Maison's champagne is the result of the know-how of its men, who take care of a 100-hectare estate. The grapes come from 40 Champagne crus, planted on a total area of ​​300 hectares. Most of the grapes for winemaking are grown within a 20 kilometer radius around the municipality of Épernay. In this territory which extends between the Reims Mountain, the Côte des Blancs and the Marne Valley, the grand crus of Pinot Noir, Chardonnay and Pinot Meunier coexist. It all begins in 1818, when Nicolas François Billecart and Elisabeth Salmon get married and found their champagne house. It is the story of a family, because Louis Salmon, Elisabeth's brother and enology enthusiast, also participates in the production of wines. And this is how, after seven generations, the whole family still contributes to passing on the tradition, remaining faithful to an immutable commitment: "Privileging quality, aiming for excellence". In this parcel the vines are managed and cared for with extreme care, fully respecting the environment. Maison Billecart-Salmon has chosen to return to traditional methods by reintroducing the draft horse and sheep. Thus the porosity and biodiversity of the soil improve, the roots develop in depth and the minerals extracted favor the growth of smaller and more concentrated grapes, which best express all the peculiarities of our terroir. In the Clos Saint-Hilaire an exceptional champagne was born which takes its name from the patron saint of Mareuil-sur-Aÿ. Produced exclusively from Pinot Noir vinified in barrels, it develops a rare complexity and surprising freshness. For each vintage, a limited quantity of bottles is produced: between 3500 and 7500, all numbered. In the 1950s the Maison introduced the cold racking technique and stainless steel vats for longer fermentation at low temperatures. The vat room mainly uses small thermoregulated vats (47 hectolitres), which allow the traceability of the vines and parcels to be observed. This type of winemaking cru by cru and grape by grape allows you to preserve all the peculiarities of the terroir. By making wine at a low temperature, the fermentation process is slowed down and favors airy and delicate aromas in which all the purity of the fruit is manifested. The authentic expression of the Billecart-Salmon style.
