A decisive character for a sparkling wine that makes itself felt and which, not surprisingly, has the word “salvàdek” in its name:in the Brescia dialect it means “wild”. It is made in the best vintages, only with carefully selected grapes coming from the oldest and best exposed vineyards of the company. It is produced with 95% Chardonnay grapes and 5% reserve wine. The fermentation of the musts takes place partly in steel tanks and partly in oak barrels. The refinement on the lees lasts for over 40 months. This is why it is a biting Franciacorta with a strong personality.
Straw yellow in appearance. The nose is intense and complex with a range of open pastry aromas (nougat, butter, candy, praline) and bergamot. Followed by notes of honey, dried fruit and mocha. Closing with a long finish that recalls dry tobacco, tea and lime. In the mouth:beautiful structure with balanced sapidity and freshness, round savory and of great persistence.
