The name "Zerotre" was chosen because, in 2015, following the second fermentation, the residual sugar had not completely disappeared and from the analyzes in the cellar, repeated several times, it emerged that in reality the bottles had a residual sugar fluctuating between 1 g/l and 3 g/l. As we already know, Dosaggio Zero has a margin that varies from 0 to 3 g/l, and the Faccoli family could have turned a blind eye, calling this Franciacorta Dosaggio Zero. But for Faccoli this has not always been the case, according to their philosophy, as long as the Zero Dosage is not less than 1 g/l it does not deserve to be called that. After a long reflection they decide to call what should have been the DZ 2015, Extra Brut vintage 2015 “ZEROTRE” in memory of this fluctuating residual sugar.   • Characteristics : The color is deep golden yellow. The nose is decidedly intense, with elegant notes of ripe fruit, toasted hazelnuts and deep notes of yeast. On the palate it is of great elegance, finesse, structure and taste-olfactory persistence.
  • Pairings : A perfect match with fish starters, scampi and red prawns, raw salmon and raw tuna.

The Faccoli farm extends for 11 hectares on the slopes of Monte Orfano, on the south-western edge of Franciacorta. The company works with respect in the countryside, applying the normal treatment cycle; the manual care of the plants, permitted by the modest extension of the company's vineyards, allows us to harvest healthy grapes when ripening is not yet complete, to preserve acidity, a fundamental component in a long-lived sparkling wine. The grapes from each vineyard arrive instantly in the cellar and are vinified individually in steel vats. Since they are obtained from grapes of a single vintage, Faccoli Franciacortas are potentially always vintage. When they started making sparkling wine, the Faccoli brothers were twenty years old. And style wasn't an issue: until the 1980s they didn't use liquer, and their only product was a very dry Brut. They began detailing production by sugar dosage to follow the market, and style became an issue. The dry and powerful bubbles of the first disgorgements fully met their personal taste, and they understood that they did not like soft sparkling wines. Gian Mario also liked aged wines with evolved bubbles. The Faccoli style was the consequence of an intuition. In 1986 they stacked some bottles in the baskets, with the intention of leaving them there for 10 years. In the meantime they began to offer products that were generally dry and vinous. The wine aged for 10 years on the yeasts, the Millesimato 10 Anni, was a confirmation: it was mature and particular, and had stood the test of time. The style was now clear! Faccoli Franciacortas are recognizable by their sugar content, which is always very low; but sugar is not the only interpreter of the individual typologies. The evolution of the base cuvée on the yeasts defines the character of each type. After secondary fermentation, the amount of time the wine spends on the remains of the yeasts defines the complexity of the sensorial profile; it is the yeast which, in this phase, gives aromatic and gustatory richness to each of the products.
