  • Refinement : After fermentation, a period of refinement of 6 months in steel on the yeast follows, enriched by frequent batonnage which gives the wine an extraordinary complexity. Subsequently, the Trento DOC Blanc de Blanc Riserva Privata rests in the bottle for at least 60 months, developing unique depth and character that makes it an experience not to be missed for lovers of quality sparkling wine.

San Lonardo - The cellar

In the ancient fermentation cellar there are tanks built exclusively in concrete. Here our red wines ferment spontaneously, without the aid of any technology or selected yeasts. Fermentations last on average no more than 15/18 days during which multiple pumpovers and délestages are carried out. Once fermentation is complete, the vats are drawn off and the pomace is gently pressed under the attentive gaze of our cellarmen, who have handed down their craft for generations.
