Passerina IGP, with a fruity aroma with notes of peach, apricot and grapefruit, has floral scents reminiscent of wisteria and lime and over time takes on a distinctly mineral character. Full flavor, with excellent freshness, good structure and long persistence.
- Procedure:obtained by soft pressing and lowering of the temperature, subsequent decantation by flotation of the musts. Fermentation takes place at a controlled temperature with selected yeasts and with subsequent stay on the lees. The wine ages for two months in the cellar, is carefully filtered and transferred to storage tanks. Bottling is carried out by checking (with the use of inert gases) that the air never comes into contact with the wine.
- Pairings:Ideal with appetizers, carpaccio and raw fish, shellfish, first and second courses based on fish. Excellent with fresh or stretched curd cheeses.
