Antinori Tomaresca Castel del Monte Pietrabianca is a wine produced in Bocca di Lupo, in an Apulian estate founded and managed by the Antinori family. The name derives from the white stone , construction material present in large quantities in Puglia. The wine is produced from native Apulian vines: Chardonnay and Fiano grapes, in small part, fermented in wood and in steel, respectively.

  • Process : Antinori Tomaresca Castel del Monte Pietrabianca is a chardonnay obtained frompressing soft of the grapes, which are then left to rest in stainless steel tanks at 10C. The chardonnay is then placed in oak barriques, where ferments at controlled temperature, finishing the process on the lees. The Fiano instead undergoes fermentation in stainless steel, at 16C, to enhance its acidity. The wine finishes its refinement in the bottle for a period of 5 months.
  • Tasting and characteristics : The contrast between the two different maturations makes the wine perfectly balanced, as it is a combination of the full taste of wood and the freshness of the grapes vinified in steel. The taste it is fresh, with citrus and sour fruit, accompanied by the sapidity of aging in oak barrels. Chardonnay Pietrabianca is an organic wine, intense and elegant, warm like the south but linear like the north. Color bright golden yellow, ha nose complex and elegant which is expressed with aromas of exotic fruit, yellow grapefruit and lime, followed by nuances of ginger and mint, with toasted tones of hazelnuts and almonds on a mineral background. The taste it is soft, enveloping and well balanced between a marked freshness and flavor in a long finish between exotic fruit and fresh almond.
  • Pairings : The wine, with its delicate contrast, is perfect to accompany white meat dishes, fish and light main courses: it will be able to allow the tasting of food with freshness and genuineness, given the balanced acidity of this product. Excellent with baked sea bream or grilled squid.
