A refined and concentrated wine, extremely soft and velvety, with intense aromas of small red fruits. Ripassa offers fruity hints and very fine tannins on the palate, with an aura of chocolate and spices. It represents one of the most significant wines of Zenato's wine evolution.

  • Vinification : The grapes are crushed, destemmed and macerated in stainless steel fermenters for 10-12 days. Once the alcoholic fermentation is complete, the new wine is separated from the skins through a soft press and stored in steel tanks until January, the period in which the dried grapes are pressed to produce Amarone. At this point the Valpolicella is "passed over" on the Amarone pomace with a stay of 7-8 days at a temperature of 25-28°C. This is followed by an 18-month refinement period in tonneaux and a few months of bottle refinement in controlled temperature environments.
  • Characteristics : deep ruby red colour, intense, fine and persistent aroma, with hints of black cherry and plum, harmonious and velvety flavour, good structure.
  • Pairings : excellent companion with game dishes, grilled meats and roasts, cured meats and mature cheeses.

Zenato Winery

95 hectares in the most suitable areas of Lugana and in the classic area of Valpolicella. Two faces, one white, the other red, both emblems of quality wines that arise from a visceral passion for the territory, from respect for time, from a family tradition that has valorised local varieties for over 60 years. 1960, San Benedetto di Lugana. This is where Sergio Zenato's heart begins to beat. His is a story made of passion and work; of full identity with its territory and its people; of entrepreneurial ability and openness to innovation with new winemaking techniques and investment in native vines. A story that from the banks of Garda has reached the hills of nearby Valpolicella, where the company's red wines are born from the sunny vineyards of Corvina and Rondinella in Costalunga, in the municipality of Sant'Ambrogio.
