This Maison is certainly characterized by a long and troubled history; today it is owned by Bollinger who has ensured that, following countless historical vicissitudes, it could regain its initial splendor; it is no coincidence that it is one of the very few Maison able to cover its needs using only grapes produced in its own vineyards! Champagne Brut Majeur undoubtedly owes its greatness to the peculiar assembly where the character of thePinot Noir and the generosity of theChardonnay join thePinot Meunier which is able to harmonize everything making drinking extremely pleasant.

  • Method : After harvesting, fermentation and sparkling, the champagne is aged for over 30 months on its lees. It is precisely this step that makes this wine elegant, fine, lively and snappy, with fresh and fruity notes that never break a delicate balance. The finish is decisive and surprisingly long.
  • Features : The Brut Majeur of the Maison Ayala is an elegant and refined champagne that offers a delicate fruity touch. It is a cuvée with fine bubbles and a beautiful golden color. On the nose, notes of yellow fruits and a sour touch are discovered. In the mouth, Ayala's Brut Majeur offers an attack full of lightness. The champagne is precise, expertly dosed, without acidity, but with a slight minerality that gives it an ethereal aspect.

Maison Ayala

The history of the Maison is unique, and it is above all that of a visionary spirit, with a melodious name that came from afar. A name that seems to have been created purposely, by pure chance, for the town of Aÿ, the seat of AYALA since its creation. Curious and daring, Edmond de AYALA has always known how to cultivate the taste to go further. The Maison AYALA is animated by the spirit of excellence and adventure inspired by its founder. A pioneer in introducing a drier style, thanks to his intuition he launched dry champagne in 1865 with a dosage of only 21 g / l. A bold choice in favor of purity, in contrast to the traditional French dosage of the time of over 150 g / l. Since its creation, the young Maison has been an essential point of reference: it is one of the founding members of the Syndicat des Grandes Marques in 1882, the current Union Des Maisons de Champagne. After France, the Maison continues its expansion in England thanks to Fernand, Edmond's younger brother, which allows the brand to achieve lasting notoriety, up to the achievement of the Royal Warrant in 1908 after the coronation of King Edward VII. In the twenties of the twentieth century, the Maison experienced a golden period with a production of one million bottles, which places it among the great Maison of the time. After the war, the Maison was led by two great men of Champagne, René Chayoux and Jean-Michel Ducellier, who worked for the interprofessional committee and contributed to the development of the Appellation. To restore the status it deserves to the sleeping beauty of Aÿ, the construction of a new cellar in 2007 allows the Maison to have a modern winemaking tool, equal to the qualitative ambition of Champagne AYALA. The return of the Maison on the international scene begins with success. Since 2006, Caroline Latrive has begun to immerse herself in AYALA's savoir-faire alongside Nicolas Klym, who takes over as the House's Chef de Cave in 2012. At the same time, Hadrien Mouflard is appointed General Manager, with the mission to accelerate the development of AYALA in France and abroad. The style of the wines asserts itself with the Chardonnay grape as the protagonist. The brand identity is completely rethought, with the creation of new labels inspired by the historic codes of the Maison.
