Champagne Pol Roger created his Prestige Cuvée in homage to Sir Winston Churchill, aware of the qualities he was looking for in his champagne: robustness, full-bodied character and relative maturity . The exact blend is a jealously guarded family secret but it is undeniable that the composition would meet the approval of the man to whom it is dedicated: " My tastes are simple, I am easily satisfied with the best ". Pinot Noir predominates, providing structure, breadth and robustness, while Chardonnay contributes elegance, finesse and subtlety. Made exclusively from grapes from Grands Crus Pinot Noir and Chardonnay vineyards that were already under cultivation during Churchill's lifetime.

  • Vinification and maturation: The must undergoes two débourbage (decantations), one in the press immediately after pressing and the second, a débourbage à froid, in stainless steel tanks at 6°C for a period of 24 hours. A slow cold fermentation with the temperature kept below 18°C ​​takes place in stainless steel with each variety and each village kept separate. The wine undergoes a complete malolactic fermentation before final blending. Second fermentation takes place in the bottle at 9°C in the deepest Pol Roger cellars (33 meters below street level) where the wine is stored until subjected to remuage (remuage) by hand, a rarity in today's Champagne . The very fine and persistent foam for which Pol Roger is renowned owes much to these deep, cool and humid cellars.
  • Tasting notes: The wine has an inviting and brilliant golden color, with a fine and regular thread of bubbles. At the beginning the refined nose exudes subtle hints of brioche and sweet spices which combine with citrus flavors and floral fragrances. As the wine warms in the glass, it becomes more powerful and the nose develops complex nuances of toasted nuts, acacia flowers and honeycomb. On the palate it is round and creamy supported by notes of fresh fruit. The structure is opulent, supported by a fabulous balance. The finish is long and powerful.
  • Pairings : The weight, balance and mineral freshness mean that this champagne can be served with Parmigano Reggiano aged for 18 months, a stuffed capon façon demi-deuil or sweetbreads cooked with morels.
