The cotechino di Norcia has been prepared according to the traditional family recipe for three generations. It provides for the exclusive use of carefully selected national pork. They are ground to coarse grain and flavored with aromas and spices without the addition of polyphosphates. The vacuum packaging and the heat treatment to which it is subjected allow the cotechino to maintain the flavor and quality unaltered.
