Saffredi of the Fattoria Le Pupille winery is a rich, complex and elegant red wine produced in the Grosseto area and dedicated to Fredi, father of the current owner Elisabetta Geppetti, who, together with the famous oenologist Giacomo Tachis, created this label, which has now become the icon symbol of the cellar. Saffredi is a Supertuscan obtained from a blend of grapes mainly Cabernet Sauvignon and Merlot, with a small addition of Petit Verdot that adds color, tannin and a little structure.

  • Vineyards : The vines, located in the surroundings of Magliano at an altitude of about 250 meters with south-east / south-west exposure, were planted in the early 1980s and are trained with the spurred cordon system on soils characterized mainly by sandstones, with little clay and little organic matter. The winery, now managed by the second generation, owns 80 hectares of vineyards and produces about 500,000 bottles a year.
  • Method : The Saffredi by Fattoria Le Pupille is a Bordeaux blend produced with carefully selected grapes, harvested, depending on the year and the characteristics of the vines, between mid-September and mid-October. Once the grapes reach the cellar, they are subjected to de-stemming and fermented in stainless steel containers at a controlled temperature with maceration on the skins for a period of about 25 days. The wine is then drawn off and aged for 18 months in French oak barrels of first passage for about 75% of the total. At the end of the maturation period, the blend of the various vines is carried out, which may slightly differ from vintage to vintage depending on the final result to be achieved.
  • Features : Impenetrable red with violet reflections. Primary aromas of blueberry, blackberry, bitter chocolate, black tea emerge on the nose. Among the secondary and tertiary aromas, vanilla bean, coffee and notes of ripe fruit. In the mouth it is full, with tannins that envelop the entire palate. Great persistence.
  • Pairings : Braised pork cheek, saddle of lamb cooked at low temperature. Also excellent or as a meditation wine. Try it with 85% modica chocolate.
