Mortadella Classica is a cooked pork sausage that has its roots in the Middle Ages. This delicacy boasts a recipe that has been handed down over the centuries and told by Cristoforo di Messisbugo in 1557. Today, Bonfatti mortadella continues to be produced with the same attention to tradition, using premium cuts of Italian heavy pork.

High Quality The composition of this mortadella follows a perfect balance between lean (about 70%) and fat (about 30%), obtained from selected cuts such as shoulder, throat and tripe. The throat, in particular, is cubed and added separately to the mixture to ensure the typical consistency and flavor. The use of additives is reduced to a minimum, with only 1.5 grams of nitrites per 100 kg of meat, in addition to sodium ascorbate as an antioxidant.

Procedure The cooking takes place in traditional brick ovens, reaching an internal temperature of 75-77°C, to best enhance the flavours of the seasoning, which includes black pepper, coriander, crushed garlic and mace.

Authentic and Versatile Taste The delicate aroma and soft, sweet flavor make Bonfatti Classic Mortadella ideal for tasting in various forms: thinly sliced ​​by machine, knife or cubed. Also perfect for enriching traditional Italian recipes, it is an ingredient that gives a special touch to fillings and typical dishes.
