Typical Lucanian product crisp, sweetish and incredibly tasty, still too unknown compared to its preciousness. Naturally dried in the sun and fried in extra virgin olive oil.
It is called by the chefs Red Gold, both for its rarity and for its intense colour.
It enriches any type of recipe with its unmistakable taste that goes well with most ingredients, the flavour it leaves in the mouth is engaging and tantalising.
Any tips on tasting?
Very versatile it can be used as Snack, appetizers, side, seasoning for pasta, scrambled eggs, soups and sautéed vegetables or with fried cod.
The crusco pepper also tends to give a suggestive color to dishes, as well as a unique flavor, in particular with regards to the Stew cooking.
