• Locally sourced Cruschi peppers fried in “Pantone” EVO oil 15g (Basilicata)
• Black Garlic in Cloves produced from Aglio Bianco Polesano DOP “Umami” 35g (Piedmont)
• Mature Piran Buffalo Cheese “Barlotti Paestum” 230g/250g (Campania)

Orecchiette and “Maritati” It is a very slow drying durum wheat pasta; It maintains cooking superbly and its porosity allows it to capture all types of seasonings very well.

Buffalo cheese In the recipe it should be used in the creaming phase of the dish to give it a sweet aftertaste and a light musky aroma

Black garlic It is a gourmet product derived from white garlic from Polesine DOP through a long maturation process with controlled temperature and humidity.
In this way, white garlic loses its strong and pungent flavor, while acquiring a soft texture and a licorice aftertaste and an umami flavor reminiscent of balsamic vinegar or soy sauce. Very easy to use, just blend it and emulsify it with oil and pasta cooking water.

Cruschi peppers Produced at zero km and fried in extra virgin olive oil. Perfect for giving the right degree of crunchiness and color to the dish, just crumble them coarsely by hand and add them after the creaming phase.
