A VINTAGE DOM PÉRIGNON IS RAISED WITHOUT RUSH, UNTIL IT REACHES A NEW HEIGHT OF EXPRESSION. WE CALL THIS ELEVATION “PLÉNITUDE 2” . After about 15 years, the wine is even more expansive. In the darkness of the cellars, his inner activity increased. The opposing and complementary elements of the assemblage resonate with each other, generating a new energy. The uniqueness of Dom Pérignon sings higher and clearer than ever. Dom Pérignon Vintage 2004 Plénitude 2 reveals an established, high maturity. It evokes shades of diaphanous gold, enhanced by the energy of light until it transforms into radiant splendor.

  • The 2004 vintage : The 2004 vintage will mark the history of Dom Pérignon for its richness and generosity.
Contrary to 2003, the vegetative development was regular and without anomalies, which led to an abundant yield, with large berries. Even if the climate promised to be mild, with a rather cool month of August, it was the dry heat of the last few weeks that determined the character of the Vintage. The harvest began on September 24th, with perfectly healthy and ripe grapes.
  • Nose and palate : The complexity is immediately warm, golden, bright and oriental exotic, with notes of candied fruits, frangipane, sweet spices and fresh coriander. On the breath, the saffron becomes grayer and more iodized, the bouquet gradually blurs and seems to become more reserved, mysterious, satisfied and satisfying. The bouquet is instantly released in all its majesty, opulent and airy, energetic and sensual, always focused on the fruit. With a shocking coherence between nose and palate, the voluptuousness gradually becomes more serious and profound. The whole has an intense persistence, with an elegant, saline character, with a slight hint of liquorice.

Dom Perignon philosophy

All creative processes have their constraints, and Dom Pérignon's is Vintage: our Champagnes are produced exclusively from a single year's harvest. Dom Pérignon's ambition is to pay homage to each vintage, whatever the challenges. Dom Pérignon dares to get involved, take risks, even going so far as to give up the creation of the Vintage when the harvest is not up to par. Dom Pérignon's creative legacy is this reinvention of his work, every year. A Dom Pérignon Millesimato is the culmination of the processes of elaboration and creativity. It embodies his vision. A Dom Pérignon Millesimato is fully expressed in its three dimensions: The vintage: the character of the seasons The Plénitude: the evolution through successive expressions thanks to a long maturation on the lees. The colour: white or rosé. These three dimensions are inseparable, and no combination is identical to the other. Each has its own space and time. As such, Dom Pérignon can only be the sum of all previous vintages and those yet to come.

A DOM PÉRIGNON IS ALWAYS AN ASSEMBLING The assembly is the foundation of the Dom Pérignon style, guided by timeless principles which have always prevailed over wine production techniques and their evolution. A Dom Pérignon can only be obtained from an assembly of grape varieties and terroir: our goal has always been to create an ever more perfect whole with an ever-growing tension, rhythm, completeness and complexity. Dom Pérignon fights for an ideal. The Dom Pérignon blend is a perfect balance of white and black grapes, in which the paradox of the opposite and complementary elements of Chardonnay and Pinot Noir creates vibrations and tensions.

THE COMPLEXITY OF DOM PÉRIGNON IS BASED ON SLOW AGING Dom Pérignon was born to face time. Both White and, remarkably, Rosé are recognized for their remarkable aging potential. The triumph of non-oxidation and the mystery of maturation on the lees (thanks to the yeast, which makes it effervescent), the wine goes through slow and subtle metamorphoses. Dom Pérignon's style is perfected. This slow aging is the necessary tribute to make Dom Pérignon one of the most complex wines ever. It takes no less than eight years in the cellar before Dom Pérignon expresses its first fullness.
