César Nieto's Acorn Chorizo is carefully prepared by selecting the best lean Iberian pork meats. The meats are seasoned with our traditional marinade, passed down through generations and based on our grandparents' recipe, which includes authentic La Vera Paprika and premium Spanish garlic . Subsequently, the chorizo is stuffed into natural casings to preserve all its distinctive characteristics and is hung to mature in our facilities located near the mountains. This process allows us to obtain a product that offers an intense and traditional gustatory pleasure, typical of Guijuelo.
Preparation : Our acorn-fed Cular Chorizo comes from animals that have 50% Iberian breed in their genetics. Our herds feed exclusively on grass and acorns, grazing freely in the meadows of Salamanca and Extremadura. Its preparation faithfully follows tradition, using our marinade recipe that we have boasted for over five decades. Our dryers and cellars in Guijuelo, with their unique microclimate and altitude of over a thousand meters above sea level, offer ideal conditions for a slow maturation that lasts almost 5 months.
