The Cicerchia, also known as"cecere", in the past was a very common legume in various areas of Umbria. The cicerchie we select are grown in Colfiorito, they have a unique and characteristic appearance, they are in fact squashed and rectangular and their flavor is a mix between the taste of chickpeas and broad beans. Cicerchie can be used to prepare soups and bruschetta but also haute cuisine dishes.
