Coglioni di Mule di Norcia : Salami with an original shape and a unique and strong taste . The name is due to the particular oval shape due to the meat being packaged in a casing still sewn by hand, and to being tied in pairs of two so that it can be left to mature astride a cane or a wooden pole. Its production is limited and this characterizes it as a niche product available almost exclusively in the production area. The peculiarity of this cured meat is that a bar of lard is inserted inside each casing , before filling. which in addition to making Coglioni di mule unmistakable, gives them a particular softness and flavour.
