The 75% Iberian Shoulder of Bellota by César Nieto offers the guarantee of the DO Guijuelo seal. Its maturation is proportionally shorter, so its flavors and aromas are very intense, perhaps more than those of the ham itself. Bellota's Spalla Iberica has a range of different shades, much appreciated by the public.

Paleta

Preparation : The shoulder offers all the intense flavor of Iberian products. The high percentage of oleic acid in its fats makes it soft and light at the same time, it melts in the mouth, quickly transporting its intense flavor and pleasant aromas to the palate. This organoleptic richness is the result of Iberian genetics, its prolonged maturation of over 24 months and its acorn-based diet.

This Shoulder Bellota DO Guijuelo is obtained from selected crossbreeds of Iberian pork, reaching 75% of the Iberian breed. The pigs feed exclusively on grass and acorns in complete freedom in the meadows of Salamanca and Extremadura . Its preparation, from the animal's forelimbs, is totally traditional, using natural salt from the Salinas de Torrevieja . The unique microclimate of Guijuelo, and its over a thousand meters above sea level, allow it to use less salt in its preparation than in other areas.
