The Patanegra Jamon Ibérico 75% Iberian breed César Nieto has an intense flavour, typical of Iberian products, quality strictly verified by the PDO approved by the DO Guijuelo seal.

Its characteristic color, which ranges from very dark purple to pink, is precisely the result of its genetic purity. The large percentage of external fat gives it a high oleic acid content, which makes it soft and light at the same time, it "melts" in the mouth. prolonged maturation of over 36 months.

Preparation : Iberian ham DO Guijuelo is obtained from Iberian pigs that feed exclusively on grass and acorns, in complete freedom in the dehesas of Salamanca and Extremadura . Its preparation from the hind limbs of the animal is completely traditional, using natural salt from the Salinas de Torrevieja . Guijuelo's unique microclimate, and its over a thousand meters above sea level, allow us to use less salt in its preparation than in other areas. This is why our Iberico bellota ham has that first sweet impression in the mouth, characteristic of products cured in Guijuelo.
