The Buzzonaglia di Tonno is one of the 33 cuts of tuna , corresponding to as many flavors: it represents the poorest part of the fish, yet, as often happens, modern gastronomy has rediscovered this flavor of traditional Sicilian cuisine, making it a refined and gourmet ingredient in some cases.
- What is meant by "Buzzonaglia"? The term "buzzonaglia di tuna" indicates the part of the fillet that is close to the central bone, the backbone of the fish: it is essentially those parts of the fillet that remain attached to the backbone and vertebrae of a fish large.
- What differentiates it : The tuna buzzonaglia is characterized by its intense flavor, its softness and its appearance, dark red in color characterized by pieces of about 3/4 cm each.
