César Nieto Iberian Salchichón is made with a special selection of meats, less lean than Chorizo, and minced with a smaller caliber. This selection of meats enhances its flavor and distinguishes it from other traditional sausages. The marinade : white wine gives it a very special and characteristic flavour, unlike marinating with paprika.

Preparation : Obtained from the meat of animals with 50% of the Iberian breed in their genetics, our herds feed exclusively on grass and acorns in complete freedom in the meadows of Salamanca and Extremadura. Guijuelo's unique microclimate and its more than a thousand meters above sea level are the factors that have made our Guijuelo dryers and cellars the ideal place for its slow maturation of almost 5 months.
