Salchichón ibérico César Nieto is made with a special selection of meats, less lean than Chorizo, and ground to a smaller size. This selection of meats enhances its flavor and distinguishes it from other traditional sausages. The marinade: The white wine gives it a very special and distinctive flavor, unlike the marinade with paprika.
Preparation: obtained from meat from animals with 50% of the Iberian breed in their genetics, our herds feed exclusively on grass and acorns in complete freedom in the meadows of Salamanca and Extremadura. The unique microclimate of Guijuelo and its more than a thousand meters above sea level are the factors that have made our drying rooms and cellars in Guijuelo the ideal place for its slow maturation of almost 5 months.
