The history of this delicious salmon has its roots in the cold Northern Seas, where Upstream has implemented a rigorous system of relaxing control in the growth of salmon.
This system, known as the "Upstream relaxing control system", ensures that the salmon are farmed in the pure waters of Northern European seas.
From here, the salmon is transferred to Parma, where the smoking process takes place with the utmost delicacy, using wood from the Emilian Apennines to give the product an authentic and unique touch.
